To all of the vegans out there, Happy World Vegan Day! We all understand how hard it is to find recipes that don't contain things like eggs, milk and butter. While it's difficult, it's not impossible.
For example, Ellen DeGeneres, famous talk show host and comedian, made the switch in 2010 and says she's never felt better. She may have started later in life but it's never too late. You can keep track with her blog Going Vegan with Ellen as well as look to it for advice if you're having some trouble.
In the meantime, we have a menu that will be sure to keep you satisfied with delicious soups, pilaf and much more!
Starter: Soup and salad
Soups like this Mexican lentil soup make for a great light appetizer; it leaves room for the main course but satisfies your appetite in the meantime. Those who want something cooler may want to try this black bean and corn salad.
Main #1: Tofu
Tofu is a great substitute for meat because it gives vegetarians and vegans their daily protein intake. The taste however can be a bit bland. This spicy peanut, tofu and spinach stir-fry will do the trick with it's blast of flavour.
Main #2: Rice
To compliment the tofu, we have this Middle Eastern pilaf. It's so good, it can be eaten by itself! Use the vegetable oil instead of butter.
Side: Vegetables
Sweet potatoes give potato dishes an extra added natural sweetness. These rosemary sweet potatoes will have you wanting more of the orange vegetables. These oven-roasted eggplants also make a yummy side.
